Chili Maya Black Bean Vegetarian Chili
[this recipe is included with seasoning packets]
Ingredients:
1- 1 cup of chopped FRESH vidaila onion
2- 1 bulb of garlic / 8 minced garlic cloves ( chop very fine or use a garlic press)
(do not use minced garlic from a jar, or garlic powder, use fresh garlic)
3- 2 tbsp. butter or smart balance
4- 2 14 oz cans veggie broth
5- 1 14 oz can tomato sauce-unflavored
6- 1 28 oz can petite diced tomatoes- unflavored
7- 2 14 oz cans pinto beans (these will be mashed to thicken the chili)
8- 2 14 oz cans black beans, drained and rinsed
9- 2 tbsp honey
10- 1 tbsp apple cider vinegar
11- fat free shredded mild cheddar cheese
12- 1 packet of

Directions:
1-melt 2 tbsp. butter or smart balance in a saute pan
2-saute onions until tender
3-add garlic and turn down heat-don't over cook garlic- it will get bitter and ruin the taste of the chili
4-put 2 cans veggie broth and 2 cans pinto beans in a large pot and use an emersion blender
to mash the beans-or use a food processor or blender
5-add seasoning packet, honey, vinegar, sauteed onions & garlic
6-heat to boiling STIRRING CONSTANTLY it will burn very easily because of the mashed pintos
7-add drained, rinsed black beans and drained petite diced tomatoes, stir, and turn down heat
Serving suggestions
pour into bowl and offer the following add-ons (on the side):
shavings of semi-sweet dark chocolate
chopped onion
1/2 cup shredded fat free mild cheddar cheese
blue corn chips and / or oyster crackers
sour cream
hot pepper sauce
red pepper flakes
TIP:
the best way to add cheese to the chili is to sprinkle small amounts onto each bite
rather than placing all the cheese on top of the chili
this allows people to add things like hot pepper sauce before the cheese is added
that is why i suggest putting the cheese on the side

vegetarian chili spaghetti
serve 1 cup of chili over 1 cup whole wheat thin spaghetti
offer the following add ons: chopped onions, fresh chopped tomatoes, and 1/2 cup fat free mild shredded cheddar
